The nomadic nature of the Kyrgyz culture or lifestyle is also reflected on its cooking. The chief ingredients are the animals they raise. Muttons and horsemeat are common main ingredients of dishes. Only the Muslim members of society do not eat this "staple" food. Nevertheless meat dishes are generally viewed as overwhelmingly tasty and healthy. Some of the popular specialties are paloo (meat pieces deep-fried in a metal cauldron), lagman (noodle dish with vegetables and vinegar sauce), and Samsi (pieces of meat wrapped in pastry). Travelers can also dig in to some street foods that are similar to Kazakh cooking.
