Largely a combination of Spanish, Taino, and African influences, Dominican cooking may be considered as a creative explosion of good cooking. It highly resembles Latin American dishes only with a more indigenous name.
Breakfast
Typical Dominican breakfast consists of eggs or meat for protein and mangu or mashed plantains as carbohydrates. Dominican salami and cheese are famous accompaniments and commonly served in hotels.
Lunch
As in most countries colonized by Spain, the most important meal, no matter how much physicians insist, is lunch. It consists of heavier stuff, namely rice, red beans, plantains, meat, and salad. It s the heartiest meal, usually followed by an afternoon nap.
Must-try eats
The foods that people must try when coming to Dominica are goat water stew. This is a tomato-based stew with goat meat, breadfruit, papaya, and droppers. It is a popular dish not only in the Dominica but also in other Carib islands. Another is Pelau. It is combination of meats, whether chicken and beef, pig tail and salt-fish or any other combination. Rice and pigeon peas are usually paired to it.
