Unlike their neighboring countries, the Uzbeks developed into a settled civilization. They are not nomads moving from one fertile land to another. The citizens managed to lead a stationary life by fertile valleys, adjacent oases, and in spaces between mountains and deserts. They lived through animal domestication and abundant agriculture. From these crops came the original and distinctive cuisine of the country.
Characterized as mildly spicy, the Uzbek foods are very flavorful. Common main ingredients are sheep meat, beef, and horsemeat. Vegetables are also widely utilized to add taste to dishes. Some of the dishes served in traditional restaurants are Osh (fried meat and vegetables), the star in Uzbek kitchens, lepyoshka (flat bread), and sumalak (bread baked by Uzbek women).
Other side street dishes tourists can get a hold of are gilmindi (jizzax pancakes), samsa (sweet walnut fritters), and gutap (deep-fried herb fritters). These are cheaper yet very tempting.
