The cuisine of Madagascar is as buff as its ecosystem. The dishes are full with different ingredients acquired through the giftedness of the land. Some of the major tastes are spicy and sweet due to Indian and Chinese influences. The staple food is rice, replaced by maize or corn when absent. It is usually accompanied by other dishes called laoka.
Laokas vary depending on the current weather and most available ingredient. Sometimes it is voanjobory (Bambara peas flavored with pork), kitoza (seasoned strips of local humped cattle), or ravitoto (shredded cassava leaves with peanuts or pork).
Some of the common condiments in the country include chile paste or sakay, and pickled lemons, magoes, and other fruits called achards.
When walking along the streets of Madagascar, the common foods from carts scattered around are mofo or bread, mokary or mofo gasy flavored with shredded coconut, and mofo sakay or spicy bread.
