Angola was under the Portuguese power for over 500 years. Due to this, some elements of the country's cuisine has been derived from the cooking of Portugal itself. The taste may be described as somewhere crossing the African traditional palate and the Latin spice-full taste of Portugal. Some dishes are spicy, other is made out of fish, and some have cassava as the main ingredient.
Other than the taste, some Angolan cooking techniques are common to Portuguese cooking methods. There is marinating or the dipping of meat into a mixture of condiments for a certain period of time until the taste is absorbed into the meat. Another technique is roasting or cooking on direct heat or flame, almost the same as grilled.
Some of the most flavorful dishes recommended to foreign visitors are Fish Calulu, a dish that can also be meat of chicken mixed with a number of vegetables, Chicken Muamba, a chicken dish with sautéed in garlic and onions also with vegetables, and farofa, which is an excellent side dish to grilled tilapia.
