Aging more than a thousand years old, Iraqi cuisine is one which may be considered as genuine among many cuisines having almost the same quality. Mesopotamian dishes are prepared through methods that go back to history. Others may even be called mere imitations. Meals usually begin with an entrée, mezze (salads) or soups, then the main dish which is usually kebabs (barbecue), and shawarma (grilled meat sandwich wrap). Ghanoush is another popular dish originally from Iraq. The ingredients are mashed eggplant and various seasonings.
For people craving for greasy and cheap foods, there are also foods available on the side-streets of the country. Burek , which is a type of baked or fried pastry is common on the streets. Another is kadaif or a kind of sweet pastry. Iraq also has its own version of pizza. They call it lahmacun. Most of these cooking has tastes or flavors enhanced through condiments like rub (very sweet date syrup), and mahlab (an aromatic spice). After gorging, people in Iraq push down food by gulping the national beverage, Arabic coffee.
