Yemeni cuisine is different from the other Middle Eastern cuisine in such a way that meals begin with bread and a fenugreek (an herb and spice frequently used in curry). To them, the bread is incomplete without this popular spice.
Yemenis love hot spicy foods. The dishes are high in spices and low in fats and sugars. The saltah is one among the main dishes eaten in Yemen, a stew of either lamb or beef cooked in hulbah (a sauce made with fenugreek) with eggs, rice and beans. A combination of biryani rice and the stewed lamb with potatoes which is locally known as zoorbiyan is the classic meal for the locals spice with cloves and cardamom.
Common beverages are lemonade, mango nectar, chai tea the the qawha, a Yemeni style coffee made with the husk of the bean and other seeds.
