My Tho (pronounced as mee-tho) may just be a launch pad to the great Mekong Delta, but the town offers a lot more. Situated in the riverbanks south of Ho Chi Minh City, My Tho is a quaint settlement teeming with stilt houses lining the shores, long slender boats loaded with fresh fruits, and locals wearing Vietnam's famous conical hats. The town's very core is its marketplace, from which majority of the local income is generated.
Arguably the highlight of one's stay in My Tho is experiencing the gastronomical treats waiting in every noodle shop and food stall. The town's signature dish is the Hu Tieu My Tho, a dish with two kinds of noodles combined, pork consommé and innards, garnished with spices and topped with soy sauce. A good side dish to this is the bo vien (beef balls), often served with the noodle soup or eaten ala carte with tuong ot (strong chili sauce.)
